
Prepare to Pay ‘Egg Taxes’ at Michigan Restaurants
Today, if you are the proud owner of a dozen eggs, you're sitting on a small fortune. Michigan's egg producers have been dealt back-to-back blows with new cage-free laws going into effect in 2025 and a nationwide bird flu epidemic. As a result, one national chain restaurant chain has decided to pass those costs along to you.

Despite consumer pleas, Waffle House, the undisputed champion of affordable Southern breakfast, has yet to open a location in Michigan. However, it has officially slapped a per-egg surcharge on its menu.
Per Egg Surcharge Coming to Michigan Restaurants
According to ABC News, Waffle House announced they would charge an additional 50 cents per egg for an "undetermined amount of time." Translation: Until the bird flu decides to leave or we find a way around needing chickens for eggs, you can expect to pay more for many things. And don't think it hasn't already reached Michigan.

The U.S. Department of Agriculture predicts egg prices could increase another 20% this year, forcing some Michigan restaurants to pass the costs along to their diners.
Michigan's Family-Owned Restaurants and Chains Feeling Bird Flu Pinch
One of my favorite places on the planet and a family-owned establishment in Jackson, Michigan, that has been crowned Michigan's Best Hole in the Restaurant, The Roxy Cafe, shared its plans late last year on Facebook (see below)
Commenters were overwhelmingly positive and empathetic to Roxy Cafe's position (I wonder if Waffle House patrons will be as understanding?). While no one likes paying more, it is refreshing when businesses are upfront about their problems and solutions.

If you're reading this, Waffle House, come to Michigan. We'll pay the egg tax and tolerate the occasional parking lot brawl. Just bring us waffles.
