
New Locally Owned Restaurant ‘Assembly’ Coming to Mason

Lansing’s Restaurant Boom Continues in 2026
There have been more than 15 openings these past few months, and there are plenty more on the way. Plus, it looks like we have another one we can add to the list!
The Greater Lansing Area food scene is about to grow with the addition of a new, locally owned restaurant called Assembly.
Assembly is a brand new concept that's being opened by the same owner as Saddleback BBQ, Slice by Saddleback, and Coach's Pub & Grill: Matt Gillett. He plans on opening Assembly at 402 S Jefferson St in Mason—the location of the former Risen Breakfast & Bakery, which closed in February this year.

When Assembly opens, Matt hopes to bring a recognizable menu to the area, but using elevated, fresh ingredients. The exact menu hasn't been released just yet. That's not coming out until June, but there is a sneak-peek on the website. We can expect to see starters, entrees, sandwiches, salads, soups, and dessert, along with a cocktail and draft menu.
When Will Assembly Open in Mason?
We won't have to wait too long for this new addition, as Matt hopes to be open sometime this July or August. And when Assembly does open, it'll be open seven days a week and offer seating for up to 50 people.
