Let's face it, so many of us really appreciate local food trucks in the Lansing area.  There's one in particular that has been open in the Lansing area for at least five years now..

And that food truck would be called "Everything is Cheesecake."  This dessert food truck has become so popular, that they're already talking about opening up at a local neighborhood location before next year.

According to the Lansing State Journal:

Today the Everything is Cheesecake truck parks at 5443 S. Cedar Street, where Ray-Brown rents a commercial kitchen to bake her desserts.

I haven't had a chance to try anything quite yet from the "Everything is Cheesecake" food truck, but I'm sure they have quite the menu and that's why they will be opening up in a building sometime soon in south Lansing.

There is another cheesecake place located in Charlotte called KorrieLinn's Cheesecakes and they have mouthwatering cheesecakes by the dozens as well.

You know what I'm getting out of all this talk about cheesecakes?  That there is high demand for these very delicious tasty desserts.

The Lansing State Journal adds:

Ray-Brown quit her full-time job in December 2017 and her cheesecakes, which often combine a layer of cake with a layer of cheesecake, never stopped gaining fans in Greater Lansing.

This new bakery will open at 5214 S. Cedar Street in Lansing by the end of the year.

I was just thinking to myself that if I ever wanted to open up a food truck business, it would either be Danny's Ice Cream Truck, or Danny's All you Can Eat Ribs.

Because I love ice cream so much, I'm leaning toward Danny's Ice Cream Truck.  I mean why drive to get ice cream when I could just drive my million dollar fortune idea directly to your place of business.

Or for that matter, any neighborhood in the Greater Lansing area.  I think I need to start writing down my ideas on paper as to what ice cream treats we would feature in my traveling ice cream truck.  I think I'm on to something here.  I'll keep you posted!
