Have you ever heard of the food truck Maria's Cuisine? Let me help you and your taste buds out because Maria Sotelo, the owner of Maria's Cuisine, makes some delicious beef birria tacos.

Birria is a Mexican dish that originated in Jalisco. It's a meat stew that is traditionally made with goat meat. It's cooked in an adobo made of vinegar, dried Chile and other spices.

Birria de res is a Tijuanan style taco that's conquered the U.S. These delicious tacos usually come with a cup of consommé to dip you're birria in. Sotelo's birria dish comes with three tacos and one cup of consommé. Her son Kevin says some customers will even request a second cup to drink or use for other dishes.

Sotelo told Lansing State Journal birria tacos aren't like you're typical taco.

It’s not like a regular taco where sometimes you put down the tortilla with a little bit of oil and that’s it. With this, it takes a little bit longer so it can get crunchy and then we give them the broth.

The food truck is located on the corner of Larch Street and East César E. Chávez Avenue in Old Town. If you want to try out their birria dish, it's $10 but you better act fast because they go quick.
