According to the Lansing State Journal, for the owners of Saddleback BBQ, the idea was to create a new restaurant brand without a new storefront or additional staff or adding much inventory.

So here's the game plan. They're starting a ghost restaurant called Tacos, Burritos & Bowls. It will operate out of their Saddleback locations in Lansing and Okemos.

Both stores are set to open for carryout and delivery only. It's also fine if someone wants to sit and eat their carryout at Saddleback.

Even though I don't know a lot about ghost restaurants, they are an increasing trend. This is believed to be the first in the Lansing area.

According to co-owner of Saddleback BBQ, Travis Stoliker, "you take all of the existing ingredients that you use for your normal restaurants, and then you find different menu items that are a different take on that same food. Add a few more ingredients and you're good to go with a ghost restaurant." (LSJ)

My motto has always been "Come Hungry." Tacos, Burritos & Bowls will offer tacos, burritos and burrito bowls. They will feature three choices between chicken, pork or sake brisket. If you order a basket, you get chips and salsa and a soft drink.

I've always been a fan of Saddleback BBQ and now it's time for me to check out the ghost restaurant inside Saddleback BBQ.
