Plus it has roasted cauliflower and roasted red pepper!  I love Sundays in the fall, that's when my husband and I get down to some serious cooking. This week Chicken Noodle soup with all the extras from our fall harvest.  Next Week I am looking forward to either Lentil or Butternut Squash soup.  The Lansing State Journal has an excellent article today about using canned pumpkin for things other than pie.  I have tried it in smoothies but hadn't considered using it to replace fat in a recipe.  How are you using the seasons harvest?
